Sous Chef - North Indian Cuisine

We are looking for a talented and experienced Sous Chef specializing in North Indian cuisine to support the Head Chef in managing kitchen operations and delivering high-quality, authentic dishes. The ideal candidate will have strong expertise in traditional North Indian cooking techniques, rich gravies, tandoor operations, and menu execution while maintaining excellent kitchen standards.

Key Responsibilities:

  • Assist the Head Chef in preparing and executing authentic North Indian dishes, including Mughlai, Punjabi, Awadhi, and regional specialties.
  • Oversee daily kitchen operations and take charge in the absence of the Head Chef.
  • Ensure consistency in taste, quality, and presentation of all North Indian menu items.
  • Manage and supervise kitchen staff, providing guidance and training where required.
  • Operate and oversee tandoor and curry sections efficiently.
  • Maintain strict food safety, hygiene, and cleanliness standards at all times.
  • Control food costs through proper portioning, inventory management, and waste reduction.
  • Assist in menu planning, recipe standardization, and new dish development.
  • Ensure timely preparation and smooth service during peak hours.
  • Address guest feedback and contribute to continuous improvement of kitchen operations.

Requirements:

  • Proven experience as a Sous Chef or Senior Chef specializing in North Indian cuisine.
  • Strong knowledge of North Indian spices, gravies, tandoor cooking, and traditional techniques.
  • Experience handling high-volume kitchen operations.
  • Leadership skills with the ability to manage and motivate a kitchen team.
  • Knowledge of food safety, hygiene, and HACCP standards.
  • Ability to work flexible shifts, including weekends and holidays.

Preferred Qualifications:

  • Experience in hotels, fine dining, or Indian restaurants.
